This modern type of food preparation keeps guests engaged as exciting vapor clouds cover and freeze our exquisite appetizers and desserts.interactive liquid nitrogen stationFrom oysters to artisan cheeses, these frozen foods will expand your palate and astonish guests of all ages. You may be wondering how liquid nitrogen works, what foods we freeze or which venues are suited for something so unique. Well, read on to find out.

The Magic Behind Liquid Nitrogen Food Stations

Our chefs love a good challenge. They use science and new preparation techniques to keep our menus innovative and entertaining. The process of freezing with liquid nitrogen is safe, but liquid nitrogen is not readily available to the public. It’s best to leave it to the pros—our chefs are trained in-house to ensure your safety during this sensational culinary demonstration.interactive liquid nitrogen stationYou may find a deeper appreciation for the unique taste if you understand how freezing with liquid nitrogen works. This rapid freezing process never alters the flavor, texture or nutritional value of the food, and an impressive cloud of smoke appears as the liquid nitrogen evaporates.

Unique Frozen Options at Your Next Boston Event

Our liquid nitrogen stations are perfect for guests who appreciate a little surprise. So make your trendy Boston event even more unforgettable with one of these fascinating delicacies:
  • Oysters: We dress each oyster on the half shell with delicate frozen pearls of horseradish. It’s a nice touch that improves the aesthetic appeal and gives it a unique taste.
  • Cheese: These bites of decadent cheese are perfect for serving at a cocktail party. If you watch closely, you’ll see that guests can actually blow smoke from their noses while they chew!
Unique Frozen Food Options at Your Next Boston EventTip: Match your favorite wine with our frozen artisan cheeses. Our event planners can help you choose the perfect pairing, and of course, we always have other drink options if your crowd prefers beer or liquor instead.
  • Dessert: The iconic Dippin’ Dots ice cream is similar to what we serve, but our chefs can also set up a selection of ice cream pops or an ice cream sundae bar for an even more memorable experience.
Whichever frozen appetizer or dessert you choose, the enchanting effect of liquid nitrogen will have all of your lucky guests talking about it for weeks.

  • Sandia Smash—watermelon chunks, ice, lime juice, agave nectar, elderflower liqueur and white tequila blend to make this red-colored summer drink hit.  It is refreshing, light and perfect with heavier food items such as barbeque pork or chicken.
  • Rum Swizzle—dark rum, amber rum, triple sec, lemon juice, pineapple juice, orange juice, simple sugar syrup, bitters and cracked ice combine to make this beverage.  Add a splash of grenadine to turn it red, and enjoy it with a traditional 4th of July burger, club-style sandwich or any type of salty finger food.
  • Strawberry Margarita—blend crushed ice, strawberries, tequila, lime juice, triple sec and simple syrup to make the perfect margarita, a delicious summer favorite that will go well with spicy dishes such as jalapeno poppers or buffalo wings.

 3 Blue Patriotic Summer Drinks:

  • The Blue Steel—made from golden rum, simple syrup, fresh lime and passion fruit juices, almond-flavored syrup, bitters, ice, blue curacao and orange and lime slices for garnish.   Add extra blue curacao for a deeper blue appearance.  It will pair well with anything tropical, like seafood skewers.
  • Pacific Breeze—combine black currant vodka, lemonade, ice, blue curacao, mint sprigs and lemon wedges for garnish. The curacao helps this drink blend well with—and elevate—simple desserts like ice creams, whipped pies and any sweet items containing vanilla.
  • Blue Cosmopolitan—mix Absolut Citron, white cranberry juice, blue curacao, lime juice and an orange peel to make a deliciously simple blue Cosmo.  Sip on this beverage while consuming fruit skewers, vegetable kebabs, summer salads and trail mixes.

 3 White Patriotic Summer Drinks:

  • Horchata Milk Shake—a traditional favorite in Latin America, and paying homage to the mix of cultures that makes up our great country, this drink will bring a little ethnicity to your red, white and blue festivities.  Mix long-grain white rice, water, cinnamon sticks, sliced almonds, ground cinnamon, sweetened condensed milk, sugar, banana, vanilla ice cream and ice in a blender.  Drink it by itself as a dessert, or pair it with simple dishes such as a taco bar or traditional nachos.
  • Pina Colada—ice, rum, coconut cream, coconut milk, pineapple chunks, sliced pineapple and a maraschino cherry make up this drink. Blend the ingredients together, and enjoy with burgers, brats and other summery favorite dishes.  Best enjoyed on the beach, by a pool or on a boat while listening to a playlist of summer classics.
  • Mojito Lemonade—you’ll need mint leaves and sprigs, limes cut into wedges, crushed ice, lime-mint syrup, white rum, lime juice, club soda, sugar, water and lime zest to create this crowd-pleasing favorite.  Drink this summertime hit while munching on fresh vegetables, salads and other light-and-refreshing food items.

3 Red, White AND Blue Patriotic Summer Drinks:

rbw drink
  • Red, White and Blue Daiquiris—the  blue layer is made from a  combination of ice, blue Alize, fresh lime juice, curacao liqueur, white rum and sugar.  Red is made from ice, frozen strawberries, watermelon chunks, lime juice, white rum and sugar, and the white comes from a mix of coconut sorbet, rum, sugar and lime juice.  When it is completed, one layer poured in at a time, the drink is super sweet and pairs perfectly with appetizers like queso blanco or fresh salsa and tortilla chips.
  • Red, White and Blue Cocktails—make a favorite red beverage, such as a Red Cosmopolitan (see Blue Cosmopolitan above, and substitute grenadine or a splash of cranberry juice for the blue curacao).  Next, run a lemon wedge around the edge of the rim of a martini glass, dip the glass in blue Tropical Punch Pop Rocks (or blue colored sugar).  Pour the Red Cosmopolitan into the martini glass, and enjoy with any items that are lightly steamed, lightly breaded or just light in general.
  • Non-Alcoholic Patriotic Drink for Kids (and Non-Drinkers)—perfect for children and non-drinkers alike, this red, white and blue beverage is a great patriotic treat.  It contains cranberry juice, blue Gatorade sports drink, sugar-free lemon-lime soda (Sprite or 7-Up) and plenty of ice.  Pour the cranberry juice first, followed by Gatorade and then the lemon-lime soda to make a red, white and blue flag-themed drink that will go well with absolutely any summer picnic favorite, especially burgers, hot dogs, potato salad, fresh fruit and more.

Swedish Glogg Recipe

Makes six servings

In a large pot, heat one bottle of port wine on low heat for about 15 minutes. Add ¾ cup bourbon and ¾ cup light rum for about 10 minutes.  Do not boil. While the mixture is heating, put 1 whole cardamom pod, 1 small cinnamon stick, a little orange zest and 2 whole cloves in the center of a cheese cloth, gathering the ends of the cloth and tying the four ingredients inside the makeshift sack with a string or fastener to secure it. Once the mixture has reach a high temperature, light it on fire with a long match stick, and—with the proper heatproof protection, pour ¼ cup sugar into the flames. Let the fire burn for 30 seconds before placing the pot lid over the flames to extinguish the fire. Turn off the stove, remove the pan from heat and let it cool for 30 minutes to an hour. Strain the glogg before rebottling it for storage (glogg should age for a least two weeks and up to one year before consuming).  Heat for about five minutes on stovetop before serving. Garnish with dried cranberries or raisins. Snacks for glogg:  Rum-soaked raisins and cranberries. Desserts for glogg:  Gingersnap cookies.  This is a typical winter or holiday combination in Sweden.

Snacks for mulled wine:  Cheese and cracker tray. Desserts for mulled wine:  Cheesecake.  For an even better combination, try a mulled wine cheesecake recipe including a glogg and sugar reduction topping that is drizzled over the top of the traditional cheesecake.

How to Host a Beer Tasting Party at Home

Beer taster for a beer tasting partyWe love beer!  And we especially love craft beer.  There are thousands of craft breweries across the country, ranging from light to dark, and all waiting for your discovery.  There’s nothing quite like finding a fabulous new beer, except maybe helping a few friends discover their new favorite brew at your own beer tasting party.Beers for a Beer Tasting PartyFor those reasons and more, we’re going to share with you some great tips on how to host a beer tasting at your place.

  1. Pick a theme.  Every good party has a theme—even wine tastings are built around themes—and beer tastings should be no different.  Some example themes include:  Summer Beers, Light vs. Dark, Oktoberfest or simply a type of beer, like Stout.
  2. Prepare your beers!  It’s best if you’ve had a chance to sample the beers yourself before introducing them to your beer tasting guests. That way you can make suggestions and share some of your notes before they give each one a try.  Once you have your theme, pick up plenty of your chosen selections at the nearest beer superstore.  TIP:  This is where a guest count comes in handy.  You’ll want to budget about three tasting servings for every bottle, with a couple of extra bottles in case you have some extra thirsty participants or unexpected guests.
  3. Good beer glasses are just as important as good beer.  Ok, maybe not just as important, but they’re number two on the list.  You’ll want to sample each beer in a stem glass, not a pint glass.  In the event that you don’t have enough of the proper beer glasses, you can certainly use wine glasses instead.  Most households have more wine glasses on hand anyway.
  4. Create the proper atmosphere.  If you ask the experts, they’ll say to create a quiet, calm and focused atmosphere for your beer tasting, but what kind of party would it be if there was no music or liveliness?  Here’s how you can compromise: have a separate room or section of the house dedicated to the “tasting” portion of the evening.  Switch rooms when it’s time to take that first sip of a new beer, then go back around the food table or into the social area of the house when the tasting is finished.
  5. The actual tasting.  You should use all five senses when tasting a beer.  First look, smell, taste and feel.  The hearing part comes after the first sip, when you begin to discuss with, and listen to, the other guests’ opinions of their samples!
  6. Pairing each beer with food.  Pairing each beer with a specific food is a classy and fun way to feed guests at your beer tasting party.  Cheeses and chocolates are the two most typical beer tasting pairings, but you can’t very well survive a night of beer tasting with just those two edible items.  Incorporate a meal, perhaps around those two ingredients—cheese goes on pretty much anything, and chocolate makes for a great ingredient in marinades—somewhere into the evening.  Serving the meal after the official beer tasting is usually best.
  7. Cleanse the palate.  This one is big!  Cleanse the palate with either water or some kind of bread (crackers will also work) in between each beer for the full tasting experience.
Beer TastingNow that you know the steps to hosting a great beer tasting party at home, here are a few more things to think about:
  • If hosting a beer tasting is too expensive for your budget, help cut down the cost by asking guests to bring their favorite six-pack to the event and make it a collaborative beer tasting experience.  You’ll be challenged with organizing the beers on-the-fly, but it will certainly give you a chance to test out your beer knowledge and hosting skills.
  • Organize your beers from light to dark.  Start with the light, refreshing beers and move toward those dark, intimidating beers.  Even with a light-to-dark line-up, though, you should cleanse the palate in between beers with some crackers or at least a sip of water.
  • Sparkling water cleanses the palate even better than still water.  It may not be as refreshing to drink, but those bubbles sure do rejuvenate that palate.
  • If the budget allows it, send everyone home with a party favor, such as a six-pack, or purchase an extra bottle of beer per each guest (in assorted flavors based on the beers you offered at the tasting) and let people choose which ones they’d like to take home.
  • Save the bottle caps.  Beer tasting is meant to teach you and your guests which new beers you love (and want to try again).  Save the beer caps and give them as souvenirs to those who fell in love with a new beer—and as a reminder of which beer to put in their carts the next time they go to the store.
  • Give everyone a pen and paper—or have people pull out their smartphones—to take notes about each beer, ranking its flavor, aroma, appearance and feel.  Sometimes saving the bottle caps isn’t enough.  You’ll want more detailed notes on what each beer tasted like so you know what to ask for at the bar the next time you feel like having an amber ale.

Tapas and Sangria Food Pairings

The little appetizers that go oh-so-well with sangria recipesAll happy summers should include happy summer drink pairings. This year, we’re recommending food pairings with sangria to help keep you filled up and cooled down during those hot Boston summers. Why we like sangria food pairing:  It’s always trendy.  Plus, it’s a bit more unique than the typical beer-and-BBQ on which many of us overdose throughout the summer.Tapas and sangria are a large and delicious part of the Spanish culture.  Sangria, named after the Spanish word “sangre,” meaning blood (in reference to the typical dark red color), is frequently and famously paired with tapas, or “caps.” Tapas are similar to small appetizers and meant to accompany drinking—and thus minimize the amount of people stumbling home from Spanish restaurants and bars at the end of the night!Spice up your summer with these four outstanding Sangria and Tapas Food Pairings:Red Wine Sangria served with ChorizoThis spicy sausage tapa pairs well with this cherry and Tempranillo sangria recipe.
